Bell Pepper Pizza

Preheat oven to 425°F (220°C). Spread pizza sauce over the base. Top with mozzarella, capsicum slices, and onion. Sprinkle oregano, chili flakes, and drizzle a little olive oil. Bake for 10–12 mins or until cheese is bubbly and golden. Slice and serve hot!

Cucumber Drink

Blend cucumber with water until smooth. Strain if desired for a smoother texture. Stir in lemon juice and sweetener. Serve over ice with mint leaves.

Stuffed Bell Peppers

Preheat oven to 375°F (190°C). Cook beef with onion and garlic until browned. Drain excess fat. Stir in rice, tomato sauce, seasoning, salt & pepper. Simmer for 5 minutes. Stuff the mixture into bell peppers, place in a baking dish. Top with cheese (if using) and cover with foil. Bake for 30–35 mins, removing foil for the last 10 mins. Serve hot!

Delish Bell Pepper & Eggplant Sautea

Cut bell pepper, eggplant and onion. Heat oil in a pan, add mustard seeds. Add chopped vegetables, salt and mix well. Set lid, cook for a couple of minutes on medium flame, stir and put the lid back on. Repeat this a few times till the veggies are cooked. Add chili powder (or cayenne pepper), mix well. Transfer to a serving dish and serve hot. .

Creamy Bell Pepper Penne

Cook penne pasta according to package directions. Drain and set aside. In a skillet, heat olive oil over medium heat. Sauté garlic and bell peppers until soft (about 5-7 mins). Lower heat, add cream and Parmesan. Stir until sauce thickens. Add cooked penne, toss to coat evenly. Season with salt and pepper. Garnish with fresh basil and serve warm.

Bell Pepper Cucumber Salad

In a small bowl, add all of the ingredients for the dressing and mix well. In a large bowl, add all of the ingredients for the salad—sliced cucumbers and peppers, everything but the bagel seasoning and chili crunch. Pour the dressing over the salad and toss to combine. Taste and adjust the seasoning as needed, adding more soy sauce for saltiness or chili crunch for spice.

Cucumber Noodles With Thai Peanut Sauce

In a bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey, garlic, ginger, and red pepper flakes until smooth. Toss the cucumber noodles with the peanut sauce until well coated. Garnish with chopped peanuts and cilantro. Serve immediately or chill for a refreshing dish.

Spicy Cucumber Salad

In a bowl, whisk together garlic, soy sauce, vinegar, sesame oil, sugar, and chili flakes. Add cucumber slices and toss to coat. Let it sit for 10–15 mins to absorb flavors. Garnish with sesame seeds and green onions. Serve chilled.
